BIO of the CHEF

Mrs Mahjouba Lamboudy, Chef at Dar Dada restaurant, Casablanca / Morocco.

Passionate about cooking from an early age, Mahjouba, has always wanted to
become a chef.

To realize her dream, she decides to take charge of her life and obtains her cooking
diploma.

Courageous, Mahjouba continues her professional experience in various
renowned culinary establishments.

She currently works in the restaurant Dar Dada where she delights us with
her cuisine both modern and traditional.

 

 

Ingredients for Chicken Tagine with Olives and Lemon :

*       2 tbsp  olive oil

*       2 tbsp vegetable oil

*       1 large onions, roughly chopped

*       3   garlic cloves, finely
chopped

*       1 tsp  ground ginger

*       ½ tsp ground white
pepper

*       1 tsp of ground Paprika

*       1 tsp of ground cumin

*       1 tsp of ground turmeric

*       Generous pinch of natural saffron

*       1 whole chicken, cut into
4 pieces

*       2 preserved lemons,
cut into strips and small cubes

*       30 green olives

*       2 tbsp fresh parsley, finely
chopped

*       2 big glasses of still Water
